Those party cookies

It’s the time of year when you have to bring something delicious to holiday parties. I often take, or send, cookies.
This year I had to make the cookies a few days early for my youngest daughter’s elementary school holiday party because I was going to be out of town. Of course, because it’s “21 Days of Cookies,” I wanted to send cookies.
I use a basic Nestle cookie recipe and change up the chips whenever I make a double batch of cookies for a special event. My 6-quart KitchenAid can tackle a double batch of a cookie recipe easily, and baking in a convention oven allows me to bake serval trays at once.

We had an extra bag of unicorn chips and a bag of Yummallo pastel baking chips – perfect for a school celebration. I used the recipe on the back of a Nestle’s peppermint truffle chips bag Maria had bought, which she advised was very similar to the traditional chocolate chip recipe, minus the brown sugar.
Although the dough was very sticky, the cookie baked up nicely and tasted absolutely wonderful. Perfect for an elementary school party.
The double batch made enough cookies to send to school, to leave for my husband, to take to my daughter Emily – and to have a few left over at home.
BASIC BAKING CHIP RECIPE
Makes about 4 dozen cookies.
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup 2 sticks butter, softened
1 1/2 cups granulated sugar
1 teaspoon vanilla extract
2 large eggs
9-10 ounce bag of baking chips
Preheat oven to 375 degrees.
Combine flour, baking soda and salt in a small bowl and set aside.
Beat butter, granulated sugar and vanilla extract in a large mixing bowl until creamy.
Add eggs one at a time, beating well after each addition.
Gradually beat in flour mixture.
Stir in baking trips.
Make into rounded balls (with about 1 tablespoon of dough each) and place onto ungreased baking sheets (or a baking mat). These tend to spread so you can chill before baking if desired.
Bake for 9-11 minutes or until edges are golden brown. Cool on baking sheets for 2 minutes; remove and place on wire racks to cool completely.
